Fear Not! The Instant Pot

It is no secret the Fort Worth Moms Blog gals are on the Instant Pot (IP) bandwagon. The IP’s first appearance showed up in a Christmas wish list written by Elisa waaaaay back in 2015. And then our very own IP goddess, Krista, has written not once but twice about this mega popular kitchen gadget in “10 Kitchen Hacks that Will Rock Your World” and “The Instant Pot Simplified: Tips, Tricks, and Recipes to Get You Started.” Even our friends at City Moms Blog Network are joining in on the fun with its recent publication of “Top 40 Instant Pot Recipes.”

In addition to our written content, the FWMB hosted a Facebook Live demonstration, “Fear Not! The Instant Pot!” In this video, FWMB contributor and IP guru Krista and FWMB owner Emily Y discuss the ins and outs of the Instant and answer some common questions. You can access the recorded video below. During the video, Krista explains and prepares SIX Instant Pot recipes right on the spot!

Recipes on the Docket

Hard Boiled Eggs (http://www.theprairiehomestead.com/2016/04/instant-pot-hard-boiled-eggs.html):

  • eggs

Rice:

  • white jasmine rice

Salsa Chicken:

  • 1-1.5 lbs chicken boneless breasts
  • 1 jar of salsa (minimum 16 oz)
  • 1 can corn (optional)
  • 1 can black beans (optional)
  • 1 block cream cheese (optional)

Sausage Penne Pasta (http://www.copymethat.com/r/VtroF0Q/one-instant-pot-penne-pasta/):

  • 1 lb smoked sausage, cut into bite sized pieces
  • 1/2 medium onion, diced
  • 2 cloves garlic
  • 1 cup sliced mushrooms
  • 8 oz penne pasta, uncooked (approx 2 2/3 cups dry penne)
  • 2 cups chicken stock/broth
  • 1 (10 oz) roasted red peppers
  • 2 cups Monterey Jack cheese, shredded
  • 1/2 cup parmesan cheese
  • 2 cups fresh spinach

Steamed Broccoli:

  • fresh broccoli, chopped into stalks
  • lemon juice (optional)

Beef Stroganoff (http://www.copymethat.com/r/GNejD9Z/instant-pot-beef-stroganoff/):

  • 1-1.5 lb ground beef
  • minced garlic
  • medium onion, diced
  • 10 oz package sliced mushrooms
  • 1 can (10.75 oz) cream of mushroom soup
  • 2 cups beef broth
  • 3 cups penne pasta
  • salt and pepper
  • 4 oz cream cheese 
Shopping List
 
Refrigerated/Fresh:
  • 1 dozen eggs
  • 2 packages sliced mushrooms
  • bag of spinach
  • 2 medium white onions
  • 1 lb broccoli (or 1 bag of chopped broccoli, fresh)
 
Dairy
  • 2 cup (16oz) monterey jack cheese 
  • 1/2 cup parmesan cheese
  • 4 oz cream cheese 
Meat:
  • 1-1.5 lbs ground beef or turkey
  • 1-1.5 lbs chicken breasts
Dry Goods
  • package of jasmine rice
  • penne pasta (total of 18ozs)
  • 16 oz jar salsa
  • can of corn
  • can of black beans
  • 16 oz chicken broth/stock
  • 10 oz roasted red peppers
  • minced garlic
  • can cream of mushroom soup 
  • 16 oz (2 cups) beef broth

    Where are the instructions for the salsa chicken?

      You will just need to watch the video for that one. You basically just dump all the ingredients (besides cream cheese) and cook on manual for 9 min. Shred chicken, then add cream cheese. 😄

    Which instant pot do you recommend? There a a few to choose from.

      It totally depends on your needs!

      The main difference between the LUX and DUO versions is the ability to make yogurt (DUO has that feature, LUX does not.)

      The numbers refer to the size… 50 = 5qt, 60 = 6qt, etc.

      I often suggest the DUO60 for people with average sized families!

    When you were cooking with the gluten free cream of mushroom soup did you use gluten free pasta in that meal as well? Sorry if I missed that. We have a family member with celiac disease and I’m wondering how the gf pasta cooks in the instant pot. Thanks!

      Yes, Melissa, every ingredient that we used during the demo was gluten free! 🙂

      As a general rule of thumb, if you are cooking an IP meal with pasta, always cook (on manual, high pressure) for half of the time listed on the pasta box. If the recipe needs more time to cook than the pasta needs, you can partially cook in the IP, release the pressure, add the pasta, then cook again for the remaining amount of time.

    What a great idea to gather up all those instant pots and host a demo like you Gals did. Where did you find so many instant pots? From those who were attending? I wish I could have seen the final meals dished out on a plate or in a bowl. Perhaps next time as you should continue to make these cooking parties for us! Great job!
