Let’s Bake: Cinnamon Oat Hand Pies

When your daughter brings you her little spatula from her play kitchen and says, “Mama, can you teach me how to use this?” You drop everything, put on an apron, and bake! In that moment, all of my home cook dreams came true.

I love baking and cannot remember a time when aprons, recipes, and time in the kitchen weren’t my favorite thing. The kitchen has always been my place. So, if you need the most obscure cookie cutter, just give me a shout. I probably have it. 🙂

Anyway, it made my soul happy when Layla asked me to teach her to use her sweet little spatula!

Let’s bake . . .

Cinnamon Oat Hand Pies (easy for little hands and play spatulas)

Ingredients:

For the Pastry Crust:

  • 2 Cups all-purpose flour
  • 1 Cup oat flour (DIY – 1 cup oats pulverized with the food processor)
  • 1/2 Tsp. salt
  • 8 Tbsp. salted butter, chilled
  • 6-8 Tbsp. ice water
  • 1 Egg, beaten

For the Cinnamon Filling:

  • 1/2 Cup brown sugar
  • 2 Tsp. cinnamon

For the Frosting:

  • 1 Cup powdered sugar
  • 5 Tbsp. maple syrup
  • 1/2 Tsp. cinnamon

Directions:

Bake the Pies

Combine both flours (because now you can rock your own oat flour!) and salt in your favorite mixing bowl. Cut your chilled butter into cubes and add to your flour mixture. Using a pastry cutter or fork, cut in butter until you have a crumbly mixture. Add ice water one tablespoon at a time until the dough is combined. Grab your favorite rolling pin, (I collect them, but my go-to is the one my grandma gave me before she passed, so I love the memories that flood when rolling dough), roll out the dough onto a floured surface, cut into any shape, and let it chill in the fridge while you mix the filling.

Next, mix together your brown sugar and cinnamon. Set it aside.

Let’s assemble! Grab your chilled dough and your cinnamon mixture, and lay half of your shaped dough onto a parchment lined baking sheet. Spoon about a tablespoon of your cinnamon mixture into each shape, leaving about a quarter of an inch along the edges. Take your beaten egg and brush it onto the exposed dough. Go through this process with each hand pie and then cover with the remaining dough shapes. Score the top with a fork and place them in your preheated oven.

Bake at 350 degrees for 25-30 minutes or until the edges are slightly golden. Your kitchen will smell amazing!

Allow hand pies to rest for a few minutes. Let’s make some frosting!

Time for Frosting

Combine all the ingredients and blend smooth.

Once the hand pies are cool but not totally room temperature, spoon frosting on each pie and let it run down sides . . . perfection!

Finally, grab a couple of plates, a cup of coffee for you and a cup of milk for your helper (ahem, sous chef), sit down, and enjoy!
