Healthy Mother's Day BrunchMother’s day is a special day indeed. It’s a time where your beautiful little family shows their utmost appreciation for all you do. Many will get gifts, but we all know there is nothing better than homemade acts of kindness. Personally, I’m wishing for my favorite meal of the day–brunch!

Not only is breakfast homemade, but it can also be healthy too because we want mom to last forever, right? You want to show your children that holidays don’t have to be full of sugar and junk. Don’t worry! I’m going to show you that healthy can be delicious and fun!

Menu:
Bubbly OJ
Waffles
Scrambled Eggs
Rainbow Fruit Sticks
Bacon

Bubbly OJ
Pour one cup of your favorite orange juice (fresh squeezed would be amazing but a lot of work) and one can of sparkling water (no sugar added) into a carafe.

Waffles
(I borrowed and made this recipe my own.)

Ingredients:
2 large eggs
1 T. pure maple syrup
1 T. vanilla extract
1/4 C. water
1.5 C. almond meal
1/2 tsp. sea salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 C. of unsweetened applesauce

Combine batter and pour in waffle iron.

Rainbow Fruit Sticks
You will need red and green grapes, pineapple, cantaloupe, blueberries, and strawberries. Get wooden kabob sticks and place colors in order of the rainbow.

Bacon
I bake my bacon so I don’t have to deal with grease and the fat can drain. Here is a great link to baked bacon from Nom Nom Paleo.
