As the seasons change and the temperature drops, nothing brings more joy to our home than a perfect, delicious bowl of noodle soup. With cooler days, you can usually find a huge pot of soup simmering in our kitchen, as noodle soups become the go to meal for my family. My three-year-old and one-year-old daughters, Madee and Sophie, are always quick to polish off their little bowls, perhaps because noodles are also fun to eat!

Beef Noodle Soup

When my husband and I visited Tokyo one winter, we stopped at ramen shops almost every other night. The steam that hits your face when a big bowl of noodle soup is set in front of you is just so comforting as you take your first bite and feel the warmth go through your body!

I first fell in love with noodle soup in Hong Kong. Almost everyday, I would walk down the street from my aunt’s apartment to a tiny street cart selling “ngau lam meen” (aka beef noodle soup). The old man recognized me and would always give me a big smile as he served me his most delicious bowl of noodle soup. And for the next 20 years, I would think about those noodles and made it my mission to recreate that exact dish to share with my family.

After many recipes later and tips from my mother-in-law, I think I have finally perfected it to my family’s taste! As a mom, I love this recipe because a pot of broth will last for many meals and it’s super easy to prepare; you just put everything in a pot and let it simmer away. I hope you and your family enjoy this as much as mine!

P.S.  The ingredients in this recipe can be found at Central Market (beef shank/chuck roast, ginger, Chinese five-spice, star anise, Sichuan peppercorns, rock sugar, and dark soy sauce, bok choy, noodles) and an Asian supermarket (bean sauce, Shaoxing rice wine, light/thin soy sauce, Chinese broccoli, noodles).  The best thing about buying spices at Central Market is you can buy what you need in the bulk section! So please, don’t be intimidated by the ingredients.
