Tradition runs strong in my family. For as long as I can remember, my favorite day of the year was the day AFTER Thanksgiving. We didn’t get up at 2:00 a.m. and wait in any lines. We didn’t go shopping at any stores. No, the day after Thanksgiving was our very own family holiday, Cookie Day.
On Cookie Day, my dad’s side of the family got together at one house and baked Christmas cookies. All. Day. Long. We are talking about hundreds of cookies here. The recipes we baked were family ones that had been used for years and years. At the end of the day, we watched a Christmas movie, ate pizza, and divided up the cookies into tins for everyone to take home. Many a Cookie Day evening, I found myself with a tummy ache from too much cookie dough and pizza.
I’ve loved sharing this tradition with my kids. It’s become one of their favorite days too. Sugar cookie sprinkling and licking the bowl are pretty hard to beat.
Triple Layer Bars have long been a Cookie Day favorite. They’ve been my go-to recipe for an interesting dessert to bring for many years, and I have yet to meet anyone who didn’t love them immediately. So, if you’re looking for something different and delicious for dessert, here’s my family’s favorite.
Triple Layer Bars
1/2 Cup butter
1 Tsp vanilla
1/4 Cup sugar
1/3 Cup cocoa
2 Cups Graham Cracker crumbs
Melt together the first four ingredients, stirring well. Add in the crumbs. Press into a 9×9 pan. Let stand for 15 minutes.
1/2 Cup butter
3 Tbs dry vanilla instant pudding
3 Tbs milk
2 Cups powdered sugar
Cream together butter, pudding, and milk. Add powdered sugar while mixing. Spread over fist layer and let stand in refrigerator for 15 minutes.
1 Cup chocolate chips
3 Tbsp butter
Melt together and spread over second layer, then refrigerate until set.
