Family Recipes :: Out of This World Corn Casserole

My favorite family memories include food.  I think of my grandmothers and the heritage of big Sunday lunches they provided for their families.  For a large part of my life, both sets of my grandparents lived in my hometown, and I love remembering the joy of racing to one of their homes after church knowing it would be filled to the brim with my aunts, uncles, and cousins and some good Texas food.  When all of my family was together on either side, it was a big gathering indeed!

corn casseroleOne staple at my Grannie’s house in particular has been and always will be Out of This World Corn Casserole. Someone will, without fail, make this dish, whether it’s her or my mom, be it Sunday, Christmas, or Thanksgiving. This isn’t your average turkey’s corn casserole.  We’re talking cream cheese and jalapeños, just like we like it here in the Lone Star State. I love it so much that I included it in our church’s cookbook a couple of years ago. (Side note: I love a good church cook book.  Also, I love a good, easy recipe as I have stated before!) When I take a bite of this corn casserole, I am immediately comforted.  It’s the best kind of comfort food–love, tradition, and cream cheese, all wrapped together with a warm blanket of jalapeño kick.

  1. I made this last night–it was easy to throw together between doorbell rings of trick-or-treaters. My husband and I both loved it; we had it with turkey fennel sausage and a green salad–Delicious! Thanks for sharing your family’s recipe.
